Baked Banana Chocolate Chip Donuts

Fluffy and delicious baked banana chip muffins – the best dessert, breakfast or snack!

I highly suggest getting a donut pan – I recently invested in one (only $12 from target) and I love using it to make healthy(ish) baked donuts! I’ve gotten so much better at baking, but I’m still not a pro – and every time I make donuts they come out perfect (unlike cookies and muffins – they’re hit or miss for me)

Banana and chocolate are one of my favorite flavor combos, so these little donuts really hit the spot. They’re super easy to prep (just make sure you have a ripe banana!) and only take about 15 minutes to bake. My husband and I devoured them pretty quickly.

Baked Banana Chocolate Chip Donuts

Ingredients

  • 1 ripe banana
  • 2 tbsp coconut oil melted
  • 1 egg
  • 1/2 tsp pure vanilla extract
  • 1 cup + 2 tbsp oat flour I use Bob's Red Mill
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 handful chocolate chips dairy-free if needed
  • dash of ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F. Spray a donut pan with cooking spray (I use coconut oil spray) and set aside.

  2. In a bowl mash your banana, then whisk in your egg. Then add the vanilla, melted coconut oil, and coconut sugar. Stir to combine.

  3. Slowly add in oat flour, then the baking powder, salt, and cinnamon. Fold in the chocolate chips.

  4. Use a pastry bag or make your own using a large plastic bag to pipe the donut mixture in the prepared donut pan. (you can spoon the mix in, it just won't be as smooth)

  5. Bake for 14-16 minutes or until they are cooked through/slightly browned around the edges. 

  6. Let them cool for about 5 minutes.
