BBQ pineapple chicken quesadilla using Trader Joe’s sweet and spicy pineapple BBQ sauce, fresh pineapple, red onion, and pepper jack cheese!
I am the biggest fan of quesadillas. They’re quick, easy and not very fussy. You can always find things in the fridge to throw into them. Also, you can get really creative with them. It doesn’t always have to be the classic cheese and chicken situation. You can throw in all different types of cuisines. Or even make them open-faced!

Quesadillas make for the perfect lunch, easy dinner or appetizer! Slice them up and let everyone grab a piece. The recipe calls for shredded or thinly sliced chicken. However, if you want to make it really easy.. grab a rotisserie chicken and use the meat on that. One of my favorite time saving hacks. Also, cooking chicken is not my favorite if I’m being honest. You could make this recipe vegetarian by using jackfruit instead of chicken! Or if you prefer pulled pork, that would also be delicious. This BBQ pineapple chicken quesadilla can be modified a number of ways to fit your needs.
I used Mission’s carb balance tortillas for this recipe. You can use any normal sized tortilla for this recipe. Siete food’s tortillas are a great option if you need grain-free ones. Their ingredients are very clean and minimal too.
What you need for this recipe:
- Trader Joe’s sweet and spicy pineapple BBQ sauce
- Thinly sliced pineapple
- Shredded or thinly sliced chicken
- Thinly sliced red onion
- Shredded pepper jack cheese, or shredded cheese of choice!
- Chopped cilantro and sliced avocado for topping, totally optional!

1/2 cup shredded or thinly sliced cooked chicken
1/4 cup Trader Joe’s sweet & spicy pineapple BBQ sauce
1/4 cup thin sliced pineapple
Thin sliced red onion to taste
1/4 cup shredded pepper jack cheese
Chopped cilantro for topping, optional
Sliced avocado for topping, optional
In a small mixing bowl combine chicken, pineapple BBQ sauce and pineapple.
Take one tortilla and lightly spray one side with nonstick spray.
Flip evenly add the chicken/BBQ sauce and pineapple combo.
Add sliced onion then sprinkle with cheese.
Heat a skillet over medium heat.
Add the quesadilla to the skillet, the sprayed side down. Top with another tortilla.
I use a round glass pie dish to press down the quesadilla, this helps everything stick together in my opinion.
Let cook for about 3-4 minutes or until the bottom tortilla is browned. Spray the top tortilla with nonstick spray.
With a spatula, very carefully flip the quesadilla, some contents from the quesadilla may fall out but you can stuff them back in.
Cook on the other side 3 additional minutes, or until browned and crispy. I use the glass pie dish on this side as well to really press everything together.
Remove from heat and cut into 4 slices.
