Chicken, julienned carrots, mandarin oranges, cilantro, green onion, sliced almonds tossed in a Chinese dressing – served in little lettuce cups!
Whenever I’m craving something light and healthy – lettuce wraps come to mind! There’s a ton of different ways to make them. It’s really all about what you’re craving. Whether, it’s Asian, Mexican (hello tacos lettuce wraps!), traditional chicken salad.. throw it in a lettuce leaf and it feels more like a meal! In other words, they’re the perfect go-to lunch or dinner.

For the chicken in this recipe, you can either poach it like I did. Click here for a step by step poached chicken recipe. You can also bake it, cook in in a skillet, or just grab a rotisserie chicken. You just want it in tiny pieces or slightly shredded.
These Chinese chicken salad lettuce cups are perfect for meal-prep, quick week-night dinners or a light lunch!

Ingredients
Chinese Chicken Salad
1.5 lbs. cooked chicken cut into small pieces, I poached mine
1–2 carrots, julienned
2 green onions, sliced, green part only
1/4 cup sliced almonds
3 tbsp cilantro, chopped
1/2 cup mandarin orange slices
1/4 tsp ground ginger
1/4 tsp garlic powder
salt and pepper to taste
butter lettuce leaves, or lettuce cups of choice
sesame seeds to taste, optional
Dressing
2 tbsp rice vinegar
1 tbsp toasted sesame oil
1 tbsp honey
1 tbsp coconut aminos OR soy sauce
salt to taste, if using soy sauce omit
Instructions
In a mixing bowl combine chicken with salt, pepper, garlic powder and ground ginger. Add carrot, green onion, cilantro, sliced almonds, sesame seeds and mandarin slices.
In a small mixing bowl whisk together all of the dressing ingredients.
Add dressing to the bowl with the chicken and mix to combine. Taste and add more seasonings if necessary.
Add desired amount of chicken salad to lettuce cups and enjoy!
