Chicken, julienned carrots, mandarin oranges, cilantro, green onion, sliced almonds tossed in a Chinese dressing – served in little lettuce cups!
Whenever I’m craving something light and healthy – lettuce wraps come to mind! There’s a ton of different ways to make them. It’s really all about what you’re craving. Whether, it’s Asian, Mexican (hello tacos lettuce wraps!), traditional chicken salad.. throw it in a lettuce leaf and it feels more like a meal! In other words, they’re the perfect go-to lunch or dinner.
Some of my other lettuce wrap recipes: BLT chicken salad, bang bang shrimp, Thai chicken burgers, In N Out protein style burgers, and chicken waldorf salad.
For the chicken in this recipe, you can either poach it like I did. Click here for a step by step poached chicken recipe. You can also bake it, cook in in a skillet, or just grab a rotisserie chicken. You just want it in tiny pieces or slightly shredded.
These Chinese chicken salad lettuce cups are perfect for meal-prep, quick week-night dinners or a light lunch!Print
