Coconut Pineapple Margaritas

These coconut pineapple margaritas are the most refreshing summer cocktail. You can also leave out the booze for a delicious mocktail!

Coconut Pineapple Margaritas

Last summer when I was pregnant we did a little staycation in downtown Austin. We went to dinner at one of our favorite central restaurants, ATX Cocina. They have a drink on the menu called the Coco Loco. So, I ordered it without the booze of course. It was by far the best mocktail I ever tasted. I knew I had to recreate it. Fast forward almost a year later I finally did. However, this time I could have it with the booze.

This drink is great with the tequila and without it. You can also do rum or vodka. The flavors just go so good with most alcohols. If you make it a mocktail, I suggest substituting the alcohol with some water to make it less sweet.

Coconut Pineapple Margaritas


Ingredients

Scale

1 (8.5 oz) can coco lopez cream of coconut, specifically this brand!!
8 oz pineapple juice
5 oz orange juice
Silver tequila to taste
2-3 oz water if you want it a little less sweet
2 orange slices
pinch of nutmeg


Instructions

Add cream of coconut, pineapple juice, orange juice, tequila and water (if using) to a blender. Blend until smooth and creamy.

Add to two glasses with ice. Add your orange slices and sprinkle with some nutmeg and enjoy!
