Creamy Tomato Sausage Pasta

Ingredients

2 tbsp olive oil
2 shallots, peeled and chopped
3 garlic cloves, minced
1 lb. sweet Italian sausage, casings removed
1 cup heavy cream
2 (14.5 oz) cans of diced tomatoes with Italian seasonings
1/2 tsp crushed red pepper flakes or to taste
12 oz pasta of choice, I like rigatoni or fettuccini
1/2 cup grated parmesan, or to taste
fresh chopped basil


Instructions

Add oil to a large pan over medium heat.

Add shallots and cook for about 3 minutes.

Add the sausage and break apart with a wooden spoon. Let cook for 8-10 minutes or until browned.

Add the garlic and let cook for another 30-40 seconds or until fragrant.

Add the cream and let simmer for 5 minutes. Then add the canned tomatoes and crushed red pepper flakes. Simmer until thickened, about 15 minutes.

Meanwhile, cook your pasta according to package instructions. Reserve 1/3 cup pasta cooking water.

Drain the pasta and add it to the pan. Add the pasta cooking water if desired as well as the grated parmesan. Mix until everything is coated.

Top with fresh basil and more parmesan if desired. Enjoy!
