I will be making this salad on repeat all summer long! It has all the elements of a well balanced salad. Also, it’s incredibly easy to throw together. The crispy prosciutto gives a great crunch. Then the creamy burrata and sweet and tart cherries. Marcona almonds are my favorite nut to add to salads. So, those were a must! The homemade creamy balsamic is super simple yet delicious.

Crispy prosciutto is a such a great protein addition for salads. It gives an elevated flair. All you have to do is bake it then break it up into tiny pieces. Cherries are in season right now which is why I chose to throw them in this recipe. Also, they’re so summery! However, you can use whatever fruit you’d like in this salad. Strawberries, blueberries, peaches, pear, figs. You can use whatever is in season and make this recipe any time of year. I will definitely be trying it with pears in the fall. And when I can finally get my hands on some ripe figs, those will absolutely be going in this salad.

This time of year I cannot get enough of fresh salads. However, the key is to make them fun and delicious! Salads do not have to be boring. I have a few must have components for most of my salads. Some sort of cheese can make a salad so much better. A handful of my favorites are burrata, feta, goat cheese, halloumi, and mozzarella! Then I always like to add some sort of nut or seed. A good dressing also makes a huge difference in flavor. Creamy balsamic is my favorite dressing of all time. A good olive oil goes a long way, I love this one [7]. But, I do also love a good honey mustard dressing too.

Crispy Prosciutto Cherry & Burrata Salad


Ingredients

4 oz spring mix
1 cup cherries, pitted and halved
1/3 cup marcona almonds
3 slices prosciutto
4 oz burrata
Creamy Balsamic Dressing
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
1 tsp dijon
2 tsp mayo
pinch of garlic powder

salt and pepper to taste


Instructions

Preheat the oven to 350 degrees F. Add the prosciutto to a baking sheet in a single layer and set aside while oven is preheating.

Make the creamy balsamic dressing by combining all of the ingredients in a small mixing bowl or jar. Mix well, cover and refrigerate until ready to use.

Bake prosciutto for 12-13 minutes. Break it up into small pieces.

Assemble salad by adding the spring mix in a large salad bowl. Add cherries, marcona almonds, and crispy prosciutto. Break up the burrata and add to the salad.

Drizzle with creamy balsamic dressing and enjoy!
