Burrata and balsamic glaze is a match made in heaven. Throw in some crispy chicken, cherry tomatoes dressed with garlic and balsamic vinegar all on top of a bed of arugula. So delicious!

This Chicken Milanese Burrata Salad is so simple. But, it also feels elevated. Burrata also adds the perfect touch to this dish as it is much richer and creamier than mozzarella, making the dish feel a lot more special. Pour yourself a glass of wine and enjoy this homemade meal!

What does “Milanese” mean?

Milanese” style means breading something (usually thin sliced meat) in flour (or skip the flour), eggs and seasoned breadcrumbs. Then frying it! Chicken Milanese is a very popular dish.

Can I make my Chicken Milanese gluten-free?

Sure! Just use gluten-free breadcrumbs.

Can I make this recipe ahead?

You can make the cherry tomato salad up to a day ahead, but I’d recommend making the chicken and assembling the salads just before you eat.

Ingredients

For the Chicken Milanese

  • 2 skinless boneless chicken breasts
  • 2 eggs
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Italian seasoned breadcrumbs
  • 3 tbsp grated parmesan
  • 3 tbsp fresh chopped parsley
  • salt and pepper, to taste
  • avocado oil or olive oil or a mixture of both for frying

    For the Salad

  • 45 cups arugula
  • 8 oz burrata
  • 1 1/2 cups cherry tomatoes, halved
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • salt and pepper, to taste
  • balsamic glaze, to taste

Instructions

  1. Prep your cherry tomato salad by combing the halved cherry tomatoes, balsamic vinegar, 1 tbsp olive oil, garlic, salt and pepper in a small mixing bowl. Mix, cover and refrigerate until ready to use.
  2. Slice each chicken breast in half horizontally. Then pound the chicken flat using the smooth side of a meat mallet. Season the chicken with salt and pepper.
  3. Prepare your breading station: whisk the eggs in a shallow bowl with a little bit of water (about 2 tbsp), salt and pepper. Then in another shallow bowl combine the breadcrumbs, grated parmesan and parsley. 
  4. Dip each chicken breast in the egg, then the breadcrumb mixture. Make sure it is fully coated. I pat the breadcrumbs on so it sticks well. 
  5. In a large skillet over medium high heat add your oil until it’s about 1/4-1/2 inch deep in the skillet. Once heated add two chicken breasts to the skillet. Make sure to wait until the oil is heated before you add the chicken. You can add a piece of breadcrumb and see if it bubbles to test this out. You will have to cook the chicken in batches. Do not overcrowd the chicken while it cooks. 
  6. Cook the chicken for 3-4 minutes per side or until golden brown and cooked through. You may need more oil for the second batch. Your chicken should be golden, crispy and cooked through. I like to let mine rest on a wire rack topped on a baking sheet to let any excess oil drip off.
  7. Slice the chicken cutlets in thin slices.
  8. Assemble salads by adding arugula, cherry tomato salad, and chicken slices.
  9. Pull apart the burrata and evenly distribute in the salads. Drizzle with desired amount of balsamic glaze.

Notes

* you can use flour before egg wash – it’s all about preference but I don’t think it is necessary.
