Want to improve your salad toppings? Fried halloumi cheese is a great place to start. Halloumi cheese has a high melting point which makes it so easy to grill or fry. Therefore, it’s a popular meat substitute. You can grill it with vegetables on skewers, toss it in salads or just add it to a charcuterie board. Either way, it makes a great addition to whatever you add it to.

I love frying it in a skillet and adding it to my salads. Cheese on a salad is a must for me. Typically when I make a Greek salad, I’m all about the crumbled feta. However, this fried halloumi Greek salad is a great way to change things up! I get my halloumi from Trader Joe’s. But, you can find it at most grocery stores.

Halloumi Greek Salad

For the dressing I used Trader Joe’s new organic cucumber kefir dressing. It’s fresh and goes perfectly with this salad. Feel free to use any Greek salad dressing or vinaigrette your heart desires. Trader Joe’s has a creamy feta dressing that would also be wonderful. However, a basic red wine vinaigrette is a great option if you want something lighter.

This time of year I always crave a good salad. This one will definitely be on my weekly rotation! You can add some grilled chicken or sautéed shrimp to add some extra protein.

Fried Halloumi Greek Salad

Ingredients

6 oz. halloumi, pat dry and cut into 1/2 inch thick squares

1 tbsp olive oil

7 oz. chopped butter lettuce

1/3 English cucumber, sliced and halved

1/2 cup cherry tomatoes, halved

1/3 cup olives of choice

1/4 cup banana rings

1 avocado, cut into cubes

1 tbsp fresh chopped dill

2 tbsp Trader Joe’s organic cucumber kefir dressing, or more/less to taste

Lemon wedges for serving


Instructions

Drizzle olive oil in a skillet over medium high heat.

Add halloumi pieces in a single layer, let cook 2-3 minutes per side or until they crispy on the outside. 

Assemble salad by combining all of the ingredients then tossing in the dressing. Serve with lemon wedges and enjoy!
