Healthier Taco Layer Dip

The perfect dip for all those summer BBQ’s! It’s ridiculously easy to make and so delicious. I’m all about tacos in any form, and there’s just something about a good dip at a party or barbecue. It’s always what people go for first.. after alcohol 😉

For the bottom layer I used Trader Joe’s chipotle black bean dip (it’s seriously so good) however, if you don’t have a Trader Joe’s nearby refried beans will be just as good! The second layer is plain greek yogurt mixed with some seasonings. The third layer is pico de gallo, you could use a REALLY chunky salsa.. I don’t recommend anything too liquidy or it’ll make the dip too watery. Pico goes best in my opinion, and the flavors are always so fresh – I buy mine pre-made at the store (shhh I feel like this is frowned upon since I’m a food blogger). The next layer is shredded lettuce, then some shredded cheddar cheese, tomatoes, black olives (totally optional, I know some people hate them), avocado, and sliced green onion.

Healthier Taco Layer Dip

Description

1 can of Trader Joe’s chipotle black bean dip OR 1 15 oz. can of refried beans

2 cups plain greek yogurt

1 tbsp chili powder

1 tsp paprika

1 tsp cumin

salt and pepper to taste

1.5 cups pico de gallo or very chunky salsa – I recommend pico

2 cups (or amount you prefer) shredded lettuce

1 cup shredded cheddar cheese

1/2 cup diced cherry tomatoes

1 3.8 oz. can sliced black olives

1 avocado, diced (optional)

sliced green onion

In an 8x8 dish/pan spread out the bottom layer of the black bean dip or refried beans

In a mixing bowl combine the plain greek yogurt, chili powder, cumin, paprika, salt and pepper. Spread all of the mixture on top of the black bean dip or refried bean layer

Pour pico de gallo or salsa on top of the yogurt layer

Spread the shredded lettuce then the shredded cheddar, tomatoes, olives, avocado and the sliced green onion

Enjoy with tortilla chips (I recommend getting a sturdy or scoop chip – this dip is heavy!)
