Marry Me Chicken And Gnocchi

When I first saw the words ‘Marry Me Chicken’ circulating online, I must admit that I was pretty baffled… But now that I’ve tried it for myself, I can totally get why you’d want to marry whoever cooked this for you! As soon as I heard about this chicken dish, I just knew that I had to make it with gnocchi. I’ve seen some versions with pasta, but there’s something so special about the light and fluffy texture of gnocchi that I knew would work perfectly with that creamy, delicious sauce! And I have to say, this recipe is everything I had hoped it would be and more.

My Marry Me Chicken and Gnocchi is the perfect elevated date night in recipe. Lucky for you, it’s also a super easy one pan meal that comes together quickly in less than 30 minutes! The results you get are super impressive without all the hassle, and so this would make a great meal for company too! Watch out though – diamond rings will be flying across the table! Pair this dish with a crisp side salad and you have yourself the perfect dinner.

For vegan or vegetarian friends, you can easily leave out the chicken and substitute vegetable broth to make it a meatless meal! Either way, it is satisfying and filling. This recipe uses heavy cream, but there are some great dairy free heavy cream options at most grocery stores that you could totally substitute with for a similar effect. I have tried Silk brand and like it a lot! You’ll have to do the same for the parmesan cheese too. But trust me, it will still be so delicious!

What you’ll need:

Chicken

  • 1.5 lb chicken breasts, boneless and skinless, cut into bite size pieces
  • 3/4 tsp Italian seasoning
  • pinch of paprika
  • salt and pepper to taste
  • 2 tbsp olive oil

Gnocchi

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup chicken broth
  • 1 tbsp tomato paste
  • salt and pepper to taste
  • 1 lb. shelf stable gnocchi
  • 1/2 cup oil packed sundried tomatoes, julienne cut
  • 1/2 cup parmesan, freshly grated
  • 1 cup baby spinach, roughly chopped
  • 1/2 a lemon, juiced
  • fresh chopped basil for topping, optional
  • more grated parmesan for topping, optional

Show me how it’s done!

  1. Season the chicken with salt, pepper, Italian seasoning and paprika.
  2. Heat a skillet to medium high heat and add the 2 tbsp of olive oil. Add the bite size chicken pieces in a single layer. Cook for 3-4 minutes per side or until cooked through.
  3. Remove from heat and set chicken aside.
  4. Melt butter and olive oil in a large skillet (that has a lid) over medium heat.
  5. Once the butter is melted, add the garlic and cook for 40-60 seconds. Stir in the heavy cream, broth, tomato paste, salt and pepper.
  6. Bring to a slight simmer then add the gnocchi and sun dried tomatoes. Cover and cook for about 4 minutes or until the gnocchi is tender.
  7. Stir in the spinach, parmesan and chicken. Add the lemon juice and give everything a good toss.
  8. Once the spinach is wilted, remove from heat.
  9. Top with fresh chopped basil and grated parmesan if desired.

FAQs

How should I store this for leftovers?

This dish is best eaten fresh, but if you have any leftovers you can transfer any these into an airtight container and into the fridge where they’ll keep for 2 – 3 days. I do think that gnocchi tends to stiffen up a little once it’s been cooked and refrigerated, so for best results I’d recommend only cooking as much gnocchi as you plan to eat in that sitting. You can reheat the sauce & chicken no problem and add some freshly cooked gnocchi to this!

I’ve never tried Gnocchi… What is it like?

You must try it!!! In simple terms, gnocchi is pretty similar to pasta but made with potatoes. It is super light and airy, and pillowy soft. They typically have ridges which help to soak up any delicious sauce!

Ingredients

Chicken

    Good recipe. I subbed the heavy cream for half and half and the chicken broth for veggie stock because I had them in the house. The meal really came together quickly and trested yummy. Next time, I’ll add more baby spinach and maybe omit the chicken for a matless monday dish.
