Waldorf salad with a twist – succulent shrimp with walnuts, apples, grapes, and celery with a creamy lemon greek yogurt dressing!
So, I think this might be my new favorite salad. I’ve always been a fan of the classic chicken waldorf salad. It’s so fresh, creamy, and light. I was thinking of ways to change it up – and substituting shrimp sounded like the perfect idea. Even, salmon would be really good.
This salad would make for the perfect lunch or dinner. It’s incredibly filling and satisfying! I crave light salads like this all summer long. This one is definitely on rotation.

Ingredients
Salad
1 lb. cooked shrimp, deveined & tails off
2 heads of romaine, chopped
juice of 1/2 a lemon
2–3 stalks of celery, chopped
1 apple, cored and chopped (I used granny smith)
1 bunch of red grapes, halved
2/3 cup walnuts, roughly chopped
Lemon Greek Yogurt Dressing
1/2 cup plain greek yogurt
2 tsp dijon
juice of 1/2 a lemon
2 tsp honey
1 tsp apple cider vinegar
1 tsp lemon zest
salt and pepper to taste
Instructions
First, prep your dressing by combining all the ingredients. Cover and chill until ready to use.
Mix chopped romaine and chopped apple with juice from 1/2 a lemon.
Add in grapes, celery and walnuts.
Toss with desired amount of dressing.. you may have some leftover depending on how much you prefer to use.
Top with cooked shrimp.
Add a little bit more lemon zest if desired. Enjoy!
