I’m always looking for new ways to change up taco night. These street corn salmon tacos might be my new favorite. Loaded with fresh flavors. Also, they are on the lighter side! Like always, so easy to throw together too. Grab yourself a nice piece of center cut salmon and make these as soon as you can! They will not disappoint.

Ingredients

Sauce
1/2 cup plain greek yogurt, sour cream will also work
juice of 1 medium lime
1/2 tsp chili powder
1/2 tsp salt if you are using yogurt
1/4 tsp smoked paprika
1/4 tsp ground cumin
1 tsp hot sauce
Street corn
2 ears of corn, washed and shucked
1 tbsp olive oil
1 jalapeño, seeds removed and finely chopped
1/4 cup chopped cilantro leaves
Salmon
1 lb center cut salmon, cut into bite sized cubes
1 tbsp olive oil
2 tsp brown sugar
1/2 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp salt
pinch of black pepper

Tacos
flour tortillas
crumbled cotija cheese


Instructions

First make your sauce by combining all of the ingredients in a small mixing bowl. Taste and adjust seasonings if necessary. Cover and refrigerate until ready to use.

In a skillet over medium hight heat add 1 tbsp of olive oil. Add the shucked corn. Cook for 2-3 minutes, give the corn a good mix and cook another 2 minutes. Remove from the skillet into a medium sized mixing bowl. Wipe the skillet clean.

Combine the corn with the jalapeño and cilantro.

Toss your salmon cubes with the brown sugar, smoked paprika, ground cumin, chili powder, garlic powder, salt and pepper.

Heat a large skillet over medium heat and add olive oil. Once heated, add the salmon pieces in a single layer. Cook for about 8 minutes, turning on each side so they are evenly cooked on all sides.

Warm your tortillas if desired.

Assemble your tacos by adding a few salmon pieces to the warmed tortilla followed by the corn mixture. Spoon on desired amount of sauce. Top with crumbled cotija and enjoy!
