This week I’ve been working on Trader Joe’s recipes that are five ingredients or less. Recipes that would make great week-night dinners or quick lunches. I think we could all use more easy recipes in our life. Trader Joe’s is filled with pre-packaged gems that can easily be used to make a more elaborate meal. I find joy in throwing meals together using TJ’s ingredients, therefore this has been a fun challenge for me! There’s lots more coming, so I hope you enjoy 🙂

Side note: olive oil, cooking spray, salt and pepper will not count towards the five ingredients! I consider those pantry staples.

I am obsessed with this quesadilla combination. Not only is it super easy, but it’s one of the best quesadillas I ever had. The cowboy caviar is a key component here. So much flavor in there. I used shredded pepper jack because I love the kick. You can also use cheddar.

Then I also used the frozen fire roasted peppers and onions. Just heat them up first then throw them in. These also added a ton of extra flavor. The jalapeño is for dipping, but also optional. It is spicy. If you don’t like a lot of spice, I would suggest Trader Joe’s green goddess dressing. It’s refrigerated by the produce. It’s way more mild and healthy. However, it’s still delicious.

I topped mine with some cilantro. This is totally optional which is why I’m not considering it a sixth ingredient. I honestly added it for photography purposes 😉

Easy Vegetarian Quesadilla

Ingredients

4 wheat and corn flour tortillas, refer to photo for the exact kind, or tortilla of choice
1/4 cup Trader Joe’s cowboy caviar
shredded pepper jack cheese or shredded Mexican cheese blend, to taste
1 bag Trader Joe’s frozen fire roasted peppers and onion
Trader Joe’s jalapeño sauce for dipping, optional
cooking spray


Instructions

First cook the frozen peppers and onions in a skillet according to the package instructions. Remove from heat and set aside.

Take one tortilla and lightly spray one side with nonstick spray.

Flip and spread the cowboy caviar on the side that isn’t sprayed. Then top with desired amount of pepper jack. You don’t want to over stuff it. Then top with about half the peppers and onions, or a little less.

Heat a skillet over medium heat.

Add the quesadilla to the skillet, the sprayed side down. Top with another tortilla.

I use a round glass pie dish to press down the quesadilla, this helps everything stick together in my opinion.

Let cook for about 3-4 minutes or until the bottom tortilla is browned. Spray the top tortilla with nonstick spray.

With a spatula, very carefully flip the quesadilla.

Cook on the other side 3 additional minutes, or until browned and crispy. I use the glass pie dish on this side as well to really press everything together.

Remove from heat and cut into 4 slices.

Do the same thing again to make a second quesadilla.

Serve with jalapeño dipping sauce and enjoy!
