This harissa chicken salad made with Trader Joe’s marinated harissa chicken thighs is bursting with flavor. Drizzled with a cilantro lime yogurt dressing.
Another easy Trader Joe’s recipe in the books! I really love finding killer products in there and throwing together a meal that can come together so quickly. My TJ’s meals are meant for busy people. For those who want a nice dinner to put on the table. But, also don’t want to spend hours in the kitchen cooking and cleaning.
This salad is a great healthy week-night dinner. Also, it makes for a delicious well-balanced lunch. It’s packed with flavor. It has romaine lettuce, shredded carrots, crumbled feta, toasted pine nuts, sliced Persian cucumber, mini peppers, and some ripe avocado. The cilantro lime yogurt dressing is super refreshing. However, feel free to use store bought ranch dressing if you don’t feel like making your own salad dressing.
Trader Joe’s harissa marinated chicken thighs are one of my favorite marinated meats they provide. Followed by the chicken shawarma thighs. I am a sucker for anything Harissa! For the salad dressing you will need a blender or a food processor. I usually use my Vitamix to make salad dressings. I got mine at QVC – it was a great deal! I use it to make dressings, marinades, sauces, soups and smoothies!

Ingredients
Salad
1 package of Trader Joe’s harissa chicken thighs, cooked according to package instructions, I prefer baking it
2 heads of romaine, chopped
1/4 cup shredded carrots
1/3 cup crumbled feta
2 Persian cucumbers, sliced
3–4 mini peppers, sliced
2 tbsp toasted pinenuts
1 avocado, sliced or cut into chunks
Dressing
1/4 cup plain greek yogurt
1 tbsp olive oil
2 tbsp cilantro leaves
1/2 tsp minced garlic
1 tbsp lime juice
Salt and pepper to taste
Instructions
First make your dressing by combining all the ingredients in a food processor or blender. Blend until everything is combined. Taste and add more seasoning, garlic or lime if need be. I go heavy on the salt when using greek yogurt for dressings.
Thinly slice your cooked chicken harissa thighs after they rest for a few minutes.
Assemble the salads by combining all of the ingredients. Drizzle with desired amount of dressing and enjoy!
Serves about 2-3 as a meal.
Notes
* If you prefer store bought dressing instead of making your own, I suggest ranch dressing for this recipe!
