One of my favorite things to make in my air fryer is fries. Whether they are classic sweet potato fries, Japanese sweet potato fries, steak fries, or just classic fries using russet potatoes like this recipe. Fries in the air fryer are the best for so many options. First, they come out so crispy! Also, they are a bit of a healthier option because you don’t have to use as much oil. If you’re looking for a fun new dipping sauce, you will love this chimichurri aioli. It’s creamy and addicting. Also, it’s packed with delicious flavors. Cilantro leaves, parsley, lime, garlic, red wine vinegar, olive oil, and mayo are the main ingredients to make this aioli.

Ingredients
Fries
2 russet potatoes, washed and cut into fries
2 tbsp olive oil
salt and pepper to taste
pinch of garlic powder
Chimichurri Aioli
1/2 cup cilantro leaves
1/4 cup Italian parsley
2 cloves garlic
1 tbsp lime juice
pinch of red pepper flakes
1/2 tsp salt
1 tbsp red wine vinegar
1/4 cup mayo
Instructions
Soak the fries in a large bowl with cold water for 30 minutes.
While the fries are soaking in water, make the chimichurri aioli by combining cilantro, parsley, garlic, lime, red pepper flakes, salt, and red wine vinegar in a blender or food processor. Add the chimichurri to a bowl or jar with the mayo and mix well. Cover and refrigerate until ready to use.
Drain the fries and pat them dry. Add the fries to a large mixing bowl with oil, salt, pepper and garlic powder.
Air fry at 380 degrees F for 15-18 minutes, or until crispy and golden. Toss them half way through cook time.
Serve the fries with the chimichurri aioli and enjoy!
