A super easy dinner using Trader Joe’s gorgonzola gnocchi as well as shaved brussels sprouts and pancetta! This delicioius meal comes together so quickly.
It’s very clear that I’m a huge Trader Joe’s fan. It’s by far my favorite grocery store. Even if they had a grocery delivery service, I wouldn’t use it. Going there once (or 2-3 times 😅) is my happy alone time. Strolling up and down each aisle and checking out what new goodies they have is so fun to me. I know it sounds kind of crazy, but it is what it is.
In addition to loving this store. I also love their frozen gnocchi selection. The cauliflower gnocchi is my go-to because it’s a healthier and versatile option. I also love the sweet potato gnocchi. Click here for my easy sheet pan dinner using it! I’ve also tried their kale gnocchi and chocolate gnocchi. The chocolate gnocchi is pretty good. But, I was not a fan of the kale one. On my Instagram page – my husband and I did a video sampling out the kale gnocchi, gorgonzola and stuffed gnocchi! We absolutely loved the gorgonzola gnocchi. It’s hard to believe it’s frozen. The flavors are amazing.
After trying it I knew I had to create an easy dinner with it. This three ingredient dinner could not be easier. But, it feels so fancy. It would make a great at home Valentine’s Day dinner paired with some wine 😉
I got the bagged shaved brussels sprouts and used half the bag. You can definitely use the whole bag too! I used the whole entire 4 oz. container of pancetta. The combo was simply delicious! Creamy gorgonzola sauce, soft pillow-y gnocchi, crispy pancetta and shaved brussels sprouts. So good!
Also, you will need olive oil and some pepper! But, I consider those pantry staples.

PrintEasy Dinner Using Trader Joe’s Gorgonzola Gnocchi
- Yield: 2 servings 1x
Ingredients
1 bag of Trader Joe’s frozen gorgonzola gnocchi
5 oz. shaved brussels sprouts
4 oz. diced pancetta
pepper to taste
2 tbsp olive oil, divided
Instructions
Add pancetta to a large skillet over medium high heat. Cook, stirring occasionally, until brown and crispy, about 7-8 minutes. Transfer to a paper towel-lined dish.
Carefully wipe the skillet. Add 1 tbsp olive oil and reduce heat to medium.
Add shaved brussels sprouts. Let them cook for a few minutes to soften them up, tossing occasionally. Set aside.
Add the other tbsp olive oil the skillet.
Add gorgonzola gnocchi and cook until it’s creamy and sauce is melted. This should take about 7-8 minutes.
Add the pancetta and brussels sprouts to the skillet. Toss everything to evenly coat.
Serve with fresh cracked pepper and enjoy!

I would also add some parmesan or something! I don’t think it’ll have enough flavor with just the heavy cream since the gorgonzola gives a lot of flavor.

you do not need sauce! it comes with the gorgonzola sauce on it which is flavorful enough 🙂
