This jalapeño pimento pasta salad is creamy, cheesy and has the perfect kick to it. Great for any summer barbecue side dish!
Pasta salad is the best summer side dish. It’s so easy to make and it’s always a crowd pleaser. Also, there are so many different ways to make it. Classic Italian, Mediterranean, BLT, pesto, the list goes on! However, this jalapeño pimento one might just be my new favorite. It would be great for 4th of July picnics, BBQ’s, pool parties.. either way it belongs on your summer menu.
Pimento cheese has quickly become one of my favorite things since I moved to Texas. It’s amazing by itself as a dip. Also, it’s delicious implemented in recipes. This pasta salad is just one of many recipe ideas I have using pimento cheese!
What you will need for this recipe:
- pasta, I used Banza gemelli but feel free to use whatever kind you’d like!
- diced pimentos, most major grocery stores sell this. However, you can also get them on amazon.
- Fresh jalapeño pepper
- Shredded sharp cheddar, I like buying a block of sharp cheddar and shredding it myself at home.
- Hot sauce, I use Frank’s red hot.
- Garlic powder, cayenne, smoked paprika, salt and pepper

1 lb. gemelli pasta, or pasta of choice, cooked til al dente
3/4 cup mayo
1 tbsp hot sauce
1 tbsp dijon
2 cups shredded sharp cheddar cheese
1 large jalapeño, seeds removed, finely chopped
12 oz. diced pimentos, drained
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp cayenne
salt and pepper to taste
1 tbsp chives, chopped
Drain pasta and rinse with cold water.
In a large mixing bowl combine mayo, hot sauce and dijon.
Add in sharp cheddar cheese, jalapeño, pimentos, garlic powder, smoked paprika, cayenne, salt, pepper and chives. Mix until well combined.
Add pasta and toss to coat. Taste and adjust seasonings if necessary.
Cover and refrigerate for at least 30 minutes. Enjoy!
