Spicy Tortellini Pasta Salad

Pasta salad will always be my favorite summertime side dish. It belongs at every BBQ, pool party, and picnic. I know summer is coming to an end soon. However, I had to throw one last pasta salad recipe on the blog. This is a little different than my usual pasta salad recipes. Instead of using traditional pasta, I used Trader Joe’s spinach tortellini. You can use cheese tortellini too! Either way it will be delicious and satisfying.

What you will need for this recipe:

  • Tortellini
  • Persian cucumbers
  • Cherry tomatoes
  • Green olives
  • Salami
  • Trader Joe’s Italian bomba sauce
  • Italian dressing
  • Garlic powder, salt and pepper
  • Chopped parsley as a little bonus garnish if you’d like!

We have a few more weeks of summer so make sure to add this spicy tortellini pasta salad to your menu! Also, it would be great for any Labor Day get together. I love how it’s unique but still has some classic pasta salad ingredients in it.

Spicy Tortellini Pasta Salad

Ingredients

12 tbsp Trader Joe’s Italian Bomba sauce
1/3 cup Italian dressing
Pinch of garlic powder
Salt and pepper to taste
(10 oz) spinach tortellini, cooked, cheese tortellini will also work
3 Persian cucumbers, chopped
1 cup cherry tomatoes, halved
1/2 cup green olives
4 oz. salami, chopped
1 tbsp fresh chopped parsley, optional


Instructions

In a small mixing bowl combine Italian bomba sauce, Italian dressing, garlic powder, salt and pepper. Add just 1 tbsp of Italian bomba sauce then taste and add more if you want it spicier.

In a large mixing bowl combine tortellini, cucumbers, tomatoes, olives, and salami.

Add dressing mixture and toss to coat. Top with fresh chopped parsley if desired.
