Peach Prosciutto Hot Honey Orzo Salad

I cannot get enough of pasta salads this time of year. However, I never think to include orzo in the rotation. I’m so glad I did because it makes the perfect cold salad base. Especially with this combination. It’s light yet filling. The peaches and hot honey just go perfectly together. Then when you add in some crispy pan fried prosciutto, mozzarella pearls and fresh basil, it just brings it all together.

Something I’ve learned is that not all hot honey is created equal. Each brand has a different level of spice. So, for this recipe I would say to start small then add more if you think it needs it. It also depends on your palette. I personally love a big hot honey flavor.

Ingredients

Hot Honey Vinaigrette 
1/2 cup olive oil
2-3 tbsp hot honey*
1 tbsp apple cider vinegar
1 & 1/2 tsp dijon
1 clove garlic, minced
salt to taste
Orzo Salad
4 oz prosciutto or pancetta, chopped
4  cups cooked orzo
2 large yellow peaches, chopped
8 oz mozzarella pearls
1/4 cup fresh chopped basil
1-2 cups arugula, optional


Instructions

First make the honey honey vinaigrette by combining all of the ingredients in a jar or container. Mix well and taste. Add more hot honey or salt if desired. Cover and refrigerate until ready to use.

Add the chopped prosciutto to a skillet over medium heat. Cook until crispy then set aside.

Assemble your orzo salad by combining orzo, chopped peaches, crispy prosciutto, mozzarella pearls, chopped basil and arugula in a large bowl.

Drizzle on the hot honey vinaigrette. Toss and enjoy!

Notes

*every brand of hot honey has a different spice level. I suggest starting with a small amount then adding more if desired.
