Peach Burrata Salad With Champagne Vinaigrette

Burrata is one of my favorite ways to dress up any salad. It works with every season. Pairs well with any seasonal fruit, tomatoes, and a variety of salad dressings. Also, it’s pretty easy to get your hands on. Most grocery stores should carry it. I usually get mine at Trader Joe’s for the best price.

The champagne vinaigrette pairs perfectly with this summer salad. It’s light, sweet and a little tangy. Feel free to refrigerate whatever you don’t use and dress it on future salads. It’s super versatile.

Peach Burrata Salad With Champagne Vinaigrette


Ingredients

Scale

Champagne VinaigretteĀ 
1/4 cup champagne vinegar
1/2 cup olive oil
1/2 tbsp dijon
2 tsp honey
1/2 tsp minced garlic
salt and pepper to taste
Peach burrata salad
2 ripe peaches, sliced
1 cup cherry tomatoes, halved
8 oz burrata
23 basil leaves, sliced into small ribbons


Instructions

First make the champagne vinaigrette by combining all of the ingredients in a jar or small container with a lid. Cover with the lid and give it a good shake. Taste and adjust seasonings if necessary. Cover and refrigerate until ready to use.

In a shallow bowl add the peaches and cherry tomatoes. Break apart the burrata on top.

Drizzle on desired amount of champagne vinaigrette (you can save the rest in the refrigerator for later use)

Top with basil ribbons.

Serve and enjoy!
