Japanese sweet potatoes are by far my favorite sweet potato. They have the best flavor and texture. Also, they crisp up so nicely in the air fryer. I make Japanese sweet potato fries all the time. However, these wedges are another great way to enjoy them. These would go great with a burger, salad, or really any dish. I love them dipping in ketchup. But, you can use any dipping sauce to enjoy them!

These come together so quickly thanks to the air fryer. My air fryer is my most used kitchen appliance. It cooks everything so fast and nicely. I have the Crux air fryer. However, there are tons of air fryers out there with all different price points.

Ingredients

3 Japanese sweet potatoes, peeled and cut into wedges
3 tbsp olive oil
3/4 tsp salt
1/4 tsp ground black pepper
1/2 tsp ground mustard
1/4 tsp garlic powder
ketchup or your favorite dipping sauce for serving


Instructions

Add the Japanese sweet potato wedges in a big bowl and fill with cold water. Let them soak for at least 30 minutes.

Drain the wedges and pat dry. Add them to a mixing bowl with oil, salt, pepper, ground mustard and garlic powder. Mix well to coat.

Add them to the air fryer basket and air fry at 400 degrees F for 16-18 minutes, or until they are crispy on the edges. Toss them half way through the cooking time.

Serve with your favorite dipping sauce and enjoy!
