Crispy pan fried goat cheese and berry salad with cucumbers, pecans and a homemade creamy balsamic vinaigrette. This salad makes for the perfect lunch or dinner side-dish.

This salad salad would be perfect for entertaining, at home date nights or just because you want to treat yourself to a nice salad! Fried goat cheese is one of my favorite additions to elevate any salad. It’s also so incredibly easy to throw together. The homemade creamy balsamic is really easy to make. However, you can also buy your favorite store bought balsamic vinaigrette to skip this step.

Fried Goat Cheese And Berry Salad


Ingredients

Fried Goat Cheese
5 oz goat cheese log 
1/4 cup flour
1 egg
1/2 cup panko breadcrumbs
oil for frying, I used olive oil
Creamy Balsamic Vinaigrette 
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp mayo
1 tsp dijon
1 tsp honey
pinch of garlic powder and salt
Salad
5 oz spring mix
2 Persian cucumbers, sliced
1/2 cup blueberries
1/2 cup raspberries
1/3 cup raw pecan halves


Instructions

Slice the goat cheese so in circles. You want to make sure the goat cheese is coming straight from the fridge and has not been sitting out on the counter. This helps keep the goat cheese firm. 

In one shallow bowl add the flour, in another shallow bowl whisk in the egg, and then in a third shallow bowl add the panko breadcrumbs.

Dredge each goat cheese slice into the flour, then the egg wash (dripping off any excess), then coat in the panko breadcrumbs.

Place coated goat cheese on a plate or cutting board and freeze for 15-20 minutes.

Meanwhile make the creamy balsamic dressing by combining all of the ingredients in a small mixing bowl or jar. Cover and refrigerate until ready to use. 

Add a generous amount of oil to a skillet over medium heat. Once hot add the goat cheese and cook until both sides are browned and crispy. It should only take 2-3 minutes per side. Add to a paper towel lined plate.

Assemble the salad by adding the spring mix to a large bowl or plate. Add cucumbers, berries, pecans and fried goat cheese

Drizzle with desired amount of creamy balsamic vinaigrette. Enjoy!
