My delicious Mediterranean Salmon Bite Bowls have got to be my new go-to easy, healthy meal. They’re packed full of flavor and goodness – and you can feel good while you eat good with this nutritious ingredient list that covers all of the food groups. These bowls would make for a nourishing lunch or weeknight dinner. With less than 15 minutes active prep time, you’ve got to try these quick and easy rice bowls! It’s super simple to throw these together. I love using Trader Joe’s tzatziki and frozen brown rice to make this recipe even easier.

Whenever I make these salmon bowls, I am transported to a warm evening by the sea in Greece with a little Ouzo in hand.
Personally, I love the way every element works together in this dish – flaky salmon in a zingy lemon pepper marinade, creamy tzatziki, crumbled feta and the freshness of the veggies which keeps things super light. Paired with brown rice, this recipe is super moreish and gives you the perfect bite in every bite you take!

I’ve always been a huge fan of rice bowls for a quick meal that ticks all the boxes. My Mediterranean Salmon Bite Bowls are nutritious, simple, and they can be easily customised to suit your tastes! The medley of flavor and texture in this recipe makes for the perfect canvas to play around and enjoy it your way. For my gluten-free friends, simply make sure you grab a GF flatbread – these are easy to find in most large grocery stores! For all my vegetarian / vegan friends, you could totally swap out the salmon for another protein like tofu or halloumi, and make sure to opt for a vegan version of the tzatziki and feta.
I went for a naan bread this time, simply because I had this on hand, but you could use any type of flatbread to accompany your salmon bowl – pita would work great in keeping with the Mediterranean vibe!
What you’ll need:
Lemon Pepper Salmon Bites
- 1 lb. salmon, center cut, skin removed, cut into bite size pieces
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp lemon pepper seasoning
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
Greek Rice Bowl
- 1 cup cooked brown rice
- 1 cup cherry tomatoes, halved or quartered
- 2 Persian cucumbers, sliced
- 1/3 cup crumbled feta cheese
- Olives of choice to taste
- Pickled red onions to taste, optional
- 2 scoops tzatziki
- 1 flatbread, cut into triangle pieces
- 2 tsp fresh dill, chopped
- Lemon wedges
How it’s done:
- In a medium mixing bowl combine salmon, olive oil, lemon juice, lemon pepper seasoning, salt, garlic powder, and dried oregano. Toss to coat the salmon bites. Let marinate at room temperature for 15-20 minutes.
- Spray a small sheet pan with olive oil spray and arrange the salmon bites in a single layer. Drizzle on any excess marinate left in the bowl. Bake at 425 degrees F for 8-10 minutes or until salmon bites are cooked through.
- Assemble your bowls by adding rice, salmon bites, tomatoes, cucumber, feta, olives, pickled red onions, tzatziki, and dill. Squeeze on some lemon and enjoy!

As I mentioned in the recipe, it should take around 10 minutes total (approx. 5 mins per side) for your salmon pieces to cook through.
The general rule of thumb when it comes to salmon is that it should feel firm but still moist – using a fork or your finger to press down gently, it should feel slightly resistant but give way without too much pressure. If it seems mushy or falls apart, it may be overcooked. If it still feels solid or ‘hard’, it needs a little longer.
Yes! The bowls themselves are 100% gluten-free. The only gluten-containing ingredient is the flatbreads, so you can feel free to omit these or opt for your favorite gluten-free alternative.
