Pimento cheese stuffed mini peppers – an easy yet delicious appetizer recipe that come together so quickly with just a handful of ingredients!
When I moved to Austin I discovered a lot of new foods that I’ve never tried living up in New Jersey. For example, posole is and pimento cheese. I am so thankful both are in my life now. Even breakfast tacos were never something I’d imagine eating until I became a Texan.
However, I will always be a Jersey girl at heart. Bagels and pizza are two of the best things on Earth. But, only New Jersey and New York do them right if I’m being honest. The funny thing is – pizza is my favorite drunk food and bagels are my favorite hang-over food. So, the two are quite the team. In Texas, tacos have replaced both. Tacos are my favorite drunk food and then breakfast tacos are my hang-over cure.
So, back to this super easy appetizer recipe..
I tried pimento cheese in dip form for the first time at our favorite restaurant here in Austin; Jack Allen’s Kitchen. Some restaurants give you complimentary bread and butter. They give you crackers and a little pimento cheese dip. It is absolutely delicious. Pimento is a pretty big deal here in the south. But, I’m now thinking all states love it – I just didn’t realize until I moved here.
These pimento cheese stuffed mini peppers are so simple because all you need are a few ingredients. You will need sweet mini peppers, pimento cheese dip/spread and cilantro. I get my pimento cheese dip at HEB or Whole Foods. I believe Trader Joe’s sells a pimento cheese dip in the summer. I’m sure most grocery stores have some sort of pimento cheese dip. I love the Whole Foods options because they have a jalapeño one if you want to make it spicy! If you can’t find pimento cheese at the store – here is a homemade recipe that looks super easy to make yourself.
Other options besides pimento cheese:
Don’t worry if you can’t find pimento cheese or simply want another option. Any soft, spreadable cheese will work for this recipe. You can use goat cheese, flavored cream cheese, or pub cheese. However, I love the taste of the pimento cheese. If you do cream cheese you can even add some finely chopped jalapeños or chives to really add some flavor.

10 sweet mini peppers, halved, seeds and ribs removed
6 oz. pimento cheese spread
1 tbsp chopped cilantro
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper or just spray the baking sheet with non-stick spray.
Stuff each mini pepper half with pimento cheese and place on the prepared baking sheet.
Bake for 10-12 minutes, or until the peppers or softened. Broil for an additional 1 minute if desired.
Top with fresh chopped cilantro and serve warm, enjoy!
