These air fryer crispy fingerling potatoes with a garlic aioli are the easiest and most delicious side dish you can ask for!
Potatoes are one of my favorite foods ever. Whether they are Japanese sweet potatoes, regular sweet potatoes, russet potatoes, baby red potatoes. I love them all. Fingerling potatoes are at the top of my list. They make for a great side dish with grilled protein, salad, or burgers!
These air fryer crispy fingerling potatoes with garlic aioli are so addicting. They’re crispy and coated in parmesan cheese. The flavors and textures are phenomenal. Also, love how quick they come together with the air fryer method.
I used my new Crux Air Pro Cook & Fry for this recipe. It’s a sleek appliance that has an air fryer and pressure cooker. I’ve always had the Crux digital air fryer. So, this upgrade has been wonderful! I loved my air fryer so much that I gifted my parents and in-laws on over the holiday’s. They both love it too! Some kitchen gadgets and appliances I find to be a little unnecessary. However, an air fryer is not one of them. They’re worth every penny, in my opinion.

Ingredients
Air fryer Fingerling Potatoes
1 lb. fingerling potatoes, sliced in half lengthwise
1 tbsp olive oil
2 tbsp grated parmesan
1/2 tsp garlic powder
salt and pepper
Garlic Aioli
1/4 cup mayo
1 tbsp olive oil
1 tbsp dijon
1 tsp minced garlic
salt and pepper to taste
1/2 tsp fresh chopped parsley, dried parsley flakes will also work
Instructions
In a mixing bowl combine the fingerling potatoes, oil, grated parmesan, salt, pepper and garlic powder. Mix and make sure the potatoes are evenly coated.
Add potatoes to the air fryer basket. Air fryer at 400 degrees for 15-18 minutes or until crispy enough to your liking. Shaking the basket or tossing around the potatoes half way.
Meanwhile, prepare your garlic aioli by combining all the ingredients. Cover and refrigerate until ready to use.
Serve air fried fingerling potatoes with the garlic aioli and enjoy!
