With summer just around the corner, it’s almost peach picking season! May through September is prime peach time, and I just can’t wait to start incorporating them in my cooking. I know that when we think of fruits we typically think dessert (there’s no denying I love a good peach cobbler or a delicious frozen peach margarita) but that’s only half the fun! I personally LOVE the addition of peach in savory dishes – the combination of fresh, salty and sweet is unbeatable, and so I’ve come up with this recipe.
My peach burrata salad with champagne vinaigrette is the perfect light lunch for the summertime – it’s super refreshing and comes together so easily! You can also serve it at dinner as an accompaniment to any delicious main course. And the best part is that it only takes 10 – 15 minutes to make! During the summer months, the last thing you want to be doing is spending hours over a hot stovetop. So you’ve got to give this one a try! If it’s particularly hot where you are, you can even leave it in the refrigerator for a few minutes before eating to let it chill down and enjoy a super refreshing treat. You must try this dish!
Salad doesn’t have to be boring!

The peaches and baby tomatoes make for something a little different than your regular lettuce leaf salad – they’re juicy and bursting with delicious natural flavor! Burrata is one of my favorite ways to dress up any salad and it works so well with every season. It’s amazing with any seasonal fruit, tomatoes, and a variety of salad dressings. It elevates any salad by bringing a creaminess and rich milky taste! Most grocery stores should carry it so it’s pretty easy to get your hands on – I usually get mine at Trader Joe’s for the best price.
The champagne vinaigrette pairs perfectly with this summer salad – it’s light, sweet and a little tangy which balances the flavors of the dish. If you have any leftover vinaigrette, feel free to refrigerate whatever you don’t use and use it on future salads. It’s super versatile, so I love to keep some prepped in my refrigerator just in case! The combination of sweet fresh peaches, sharp vinaigrette and creamy burrata is unmatched, and unlike any salad I’ve had before. I can already tell this is going to be a staple meal for me this summer!

What you’ll need:
Champagne Vinaigrette
- 1/4 cup champagne vinegar
- 1/2 cup olive oil
- 1/2 tbsp dijon
- 2 tsp honey
- 1/2 tsp minced garlic
- Salt and pepper to taste
Peach Burrata Salad
- 2 ripe peaches, sliced
- 1 cup cherry tomatoes, halved
- 8 oz burrata
- 2-3 basil leaves, sliced into small ribbons

- First, make the champagne vinaigrette by combining all of the ingredients in a jar or small container with a lid. Cover with the lid and give it a good shake. Taste and adjust seasonings if necessary. Cover and refrigerate until ready to use.
- In a shallow bowl, add the peaches and cherry tomatoes. Break apart the burrata on top.
- Drizzle on your desired amount of champagne vinaigrette (you can save the rest in the refrigerator for later use).
- Garnish with fresh basil ribbons.
- Serve and enjoy!

I typically find that most salads are best eaten fresh but if you feel like the portion size is too big to finish the first time around, here are some tips! If you are feeding less than 3 – 4 people, I’d recommend keeping the dressing separate from the salad and drizzling over individual portions so that you’re able to later store the salad and dressing separately in the refrigerator. Storing with the dressing already on it tends to result in soggy salad, so for best results keep them in different airtight containers in the fridge where they’ll last up to 3 – 4 days.
Yes – this Peach Burrata Salad is completely free of gluten products! If you know you have some friends with dietary restrictions dining with you this festive season, this recipe is a must-try. It’s meatless, gluten free, and can easily be made vegan by subbing the burrata for your preferred alternative! Just make sure to double check the ingredients of your dijon mustard to make sure there are no gluten containing additives.
