So, not only is this Sheet Pan Sweet Potato Gnocchi Dinner with Chicken Sausage and Brussels Sprouts delicious – but it’s also incredibly easy. Just throw a few items onto a sheet pan and toss it in the oven. Consequently, it’s perfect for back to school/ busy week-nights. No sink full of dirty dishes with this recipe! There’s no reason not to put it on your weekly dinner rotation.
Trader Joe’s never ceases to amaze me. I’ve been a huge fan of their frozen cauliflower gnocchi for the longest time now. Click here for my blog post for all things cauliflower gnocchi! However, this frozen sweet potato gnocchi is also phenomenal – and absolutely perfect for fall!
I love this gnocchi on it’s own, but I wanted to make a balanced dinner with it. In addition to the sweet potato gnocchi, I paired it with brussel sprouts and chicken apple sausage. As a result, this dinner is heavenly.
Do I have to use sweet potato gnocchi in this recipe? What if I don’t have a Trader Joe’s near me?
I love how much the sweet potato gnocchi makes this dish just scream fall, but any brand of gnocchi will work here. As I mentioned, I love Trader Joe’s cauliflower gnocchi and it would make a great low carb option.
Can I make this Sheet Pan Gnocchi Meal vegetarian?
If you want this meal to be meatless, just the brussel sprouts and gnocchi would be good too!

Description
This easy Sheet Pan Sweet Potato Gnocchi Dinner with Chicken Sausage and Brussels Sprouts is made using simple ingredients you can grab from Trader Joe’s – frozen sweet potato gnocchi, brussel sprouts, and apple chicken sausage! It is the ultimate weeknight sheet pan meal the whole family will love!
Ingredients
- 1 lb. brussel sprouts, trimmed and halved
- 1 tbsp + 2 tsp olive oil, divided
- 1/4 tsp garlic powder
- salt and pepper, to taste
- 1 (12 oz.) package Trader Joe’s apple chicken sausage, sliced
- 1 bag Trader Joe’s frozen sweet potato gnocchi
Instructions
- Preheat the oven to 425 degrees F.
- Line a large baking sheet with parchment paper, foil, or spray with non-stick cooking spray.
- In a mixing bowl, toss the brussels sprouts with 1 tbsp of the olive oil, garlic powder, salt and pepper. Arrange on one side of the baking sheet in a single layer.
- Add the chicken sausage to the baking sheet in a single layer.
- Next, empty the bag of sweet potato gnocchi in the remaining portion of the baking sheet. Drizzle the gnocchi with the remaining 2 tsp of olive oil.
- Bake for 22-24 minutes. Toss it and enjoy!
Notes
Trader Joe’s frozen sweet potato gnocchi is seasoned with butter and sage – if you are using a different brand without seasonings you may want to add some dried herbs or spices when you toss the brussels sprouts with the olive oil, garlic powder and seasonings.

I WAS A LITTLE NERVOUS TO BAKE THIS GNOOCHI ON A SHEET PAN SINCE THE SAUCE is pretty thick but this gave me the idea to try it in the oven! I love the combo of these three together for my meal preps!

We tried it with Trader Joes frozen broccoli as another commenter suggested since I wasn’t convinced the kids would do the brussel sprouts. It was a hit.
Modifications to the time included doing it on 2 pans (one for the broccoli since it was a lot, and one for the gnocchi and sausage). Broccoli was in for probably 27 mins, and the gnocchi and sausage only did about 15 mins.
